Founder Story

From the idea to the first "Cheers"

POLLY was founded in Cologne in 2022 by Philip Kahnis – the initial ideas came to life at the kitchen table during his wife's pregnancy. What they found lacking was simple: that "certain kick" in non-alcoholic drinks. Instead of another craft gin brand that "also does non-alcoholic," Philip quickly built POLLY – modern, uncomplicated, and with a focus on taste and fun.

We want alcohol-free to not be a spoilsport, but to feel like beautiful moments. A drink you celebrate just as much as a classic long drink – but without the headache.

The Manufacturing

The Art of Distillation – but Alcohol-Free

POLLY focuses on flavor diversity. Distillation creates complex, clear taste profiles that appear sophisticated when mixed. Selected ingredients provide depth, structure, and that "bite" that many alcohol-free options lack - and all of this is Made in Germany, vegan & gluten-free.

The Ingredients

We work with selected & natural ingredients, such as real ginger and cucumber as well as orange and gentian – so that freshness, spiciness and tartness interact perfectly.

The Procedure

Through gentle aroma extraction and genuine distillation, we capture the highly concentrated essence of plants, herbs, and fruits in a complex process, building a complex profile that unfolds its full flavor when mixed as a long drink or cocktail.

Product Selection

Every "Jeck" (fool, individual) is different – that's why we offer real alternatives for every taste. In developing our drinks, we were inspired by classics such as Italian bitter aperitifs, limoncello, as well as rum and tequila. This way, you'll always find the perfect base for your favorite drink with us.
